nom nom nom - christmas treat recipes

Thank you for visiting our last official post for the year!

I thought to celebrate the last post we would hop inside the 'engine room' (as my boyfriend loves to call it) and cook up a storm with your little ones for the festive season.

We take a look at my favourite recipes for Christmas including White Christmas (which I am making today!), Candy Cane Cupcakes, Ginger Bread House and Marshmellow Snowmen.

Firstly, I am so excited to make White Christmas for my family. It's such a delicious recipe and it's great in bite size pieces (so we save lot's of room for other yummy treats). Hopefully they will be a hit with my boyfriends nieces and nephews as well.

White Christmas Recipe

Ingredients

1/2 Cup Mixed Dried Fruit (I use sultana's and apricots)
100g (slightly round 1/2 cup) chopped morello cherries - this is my own addition
1 cup full cream powdered milk
1 cup icing sugar
1 cup desiccated coconut
1 1/4 cups rice bubbles
250g Copha
200g white chocolate, roughly chopped

Line two 12-hole (1 1/2 tablespoon-capacity) mini muffin pans with paper cases. Combine dried fruit, cherries, powdered milk, sugar, coconut and cereal in a heatproof bowl.

Place copha in a saucepan over medium heat. Cook for 4 to 5 minutes or until melted. Remove from heat. Add chocolate. Stir to combine. Add to dried fruit mixture. Mix to combine.

Working quickly, spoon mixture into paper cases. Top with cachous. Refrigerate for 2 hours or until set. Serve.

When I stumbled across these cupcakes I knew I definitely had to give them a try. Check out 'Handmade Charlotte' blog to gain the full ingredients and process for making these little cuties.

 Ginger Bread House Recipe

In the build up to Christmas I have noticed many of my friends on Facebook posting photo's of their absolutely delightful Ginger Bread Houses. Whilst I have never attempted one it will definitely be on my list of things to do for next Christmas. They just look so impressive!
